Corkscrew BBQ is such a story. It started when Will and Nicole Buckman catered some parties for folks at Will’s full-time job with AT&T. Word of mouth got around, and soon the glowing comments and demand convinced the couple to start their own restaurant.
Initially, the restaurant was a tiny trailer with only outdoor seating in north Spring. Continued growth and success prompted the couple to search for a permanent home. They found the perfect location in Old Town Spring, with an old renovated building with lots of country charm, plenty of indoor and outdoor seating, a play area for the kids, and parking out back. This ensures every serving is fresh and quality is never sacrificed by cooking too much or pushing yesterday’s leftovers on unsuspecting patrons.
The quality of the barbeque starts with the highest quality of the meat – Prime Halal Non-GMO all natural Brisket. Prime Briskets are the highest quality of Prime you can get. Cattle are free range and grass fed up to six weeks prior and are never given hormones or antibiotics. Briskets are first trimmed before cooking so as not to pass on all the extra fat to you. Each brisket loses 2-4 pounds per brisket, and then another 2-3 pounds during cooking.
Diners can choose from moist brisket, described as “fatty brisket” with beautifully rendered marbled brisket, or “lean brisket” that has no fat in the meat with ¼ inch fat cap on top. Whichever you prefer, the flavorful brisket slow cooked at Corkscrew BBQ is some of the best around.
